Apa khabar semua? Semoga sihat sejahtera hendaknya sambil menjalankan tugas seharian. Dah sarapan ke pagi ni? Tentu dah kan. Kepada yang belum bersarapan, yuk cepat sarapannya ya..Nanti angin naik ke kepala, langsung satu kerja pun tak boleh nak buat:)
Hari ni saya nak share satu lagi kek terbalik tapi kali ni menggunakan buah peach. Saya suka buat kek macam ni sebab teksturnya agak lembap sikit dan sesuai untuk dessert selepas makan malam. Cik Suami lazimnya balik kerja hampir pukul 7 pm jadi jarang berpeluang menikmati minum petang. Kalau saya buat kek selalunya hanya dapat dihidangkan selepas makan malam, jadi saya lebih suka buat kek yang tekstur nya lembap-lembap macam ni.
Kalau dah teskturnya lembap tentu kek ni tak tahan lama sebab mudah dihinggapi kulat...tapi jangan bimbang, Kalau buat gerenti habis dengan kadar segera, sebab rasanya sedap. Kalau nak lagi sedap makan dengan aiskrim vanilla.
Resepi ini tak menggunakan telur dan saya ambilnya dari blog Chandrabhaga, seorang lagi blogger Vegan. Walaupun tidak menggunakan telur keknya tetap gebu dan sedap.
Resepi asalnya menggunakan buah peach yang segar tapi disebabkan tak ada kedapatan, saya guna peach dalam tin saja dan resepinya saya terpaksa ubah sikit sesuai dengan peach dalam tin yang saya guna.
Eggless Peach Upside-Down Cake

Ingredients:
1 1/2 cup all purpose flour
1 can of peach
3/4 cup of milk
1/3 cup of Yogurt - (I used peach flavoured)
1/2 cup sugar
1/4 cup of light brown sugar - I added
1/4 cup of melted butter - I added
A pinch of salt
1 1/2 tsp of baking powder
1 inch of ginger - shredded
1 stp of Vanilla extract
Water - few tbsp (I put 2 TBS of peach juice from the can)
1 tsp of lemon zest
Method:
Pre-heat oven to 350 degrees Fahrenheit. Spray a non-stick 8 inch square or round pan and dust with flour. (The sugar syrup at the bottom of the pan is going to be very sticky so grease the pan with enough spray and line with a parchment paper).
Cut peaches into thin slices. Mix 1/4 cup sugar with little water and cook on medium heat until it starts thickening and bubbly. Add the peaches and mix well. (I skipped this step as I used can peaches. In a cast-iron skillet over medium heat, melt the 1/4 cup of butter. Remove from the heat and sprinkle the brown sugar around the skillet. Arrange the peach slices )
In a bowl, add flour, baking powder, ginger, lemon zest, 1/2 cup sugar and salt. Add the milk, yogurt, and beat until well mixed without any lumps. Add the 2 tbs of peach juice and vanilla extract and beat for a few seconds or until well incorporated. Pour the prepared batter over the peaches and bake for about 30 minutes or until done. Let it cool for a while. Invert the cake carefully and let it cool completely. Cut and serve with a scoop of ice-cream. Hmmm... it was perfect!

Ada banyak lagi baki juice dalam tin jadi saya buatkan pulak sauce untuk kek ni. Cuma tambahkan sedikit lime juice dari sebiji limau dan hirisan halia, masak hingga pekat. Tuang atas sepotong kek sebelum makan. Memang yummy....
