Pertama sekali, buat anak-anak yang mendapat keputusan cemerlang untuk UPSR yang baru diumumkan semalam, sekalung Tahniah diucapkan, kepada yang kurang bernasib baik, jangan sedih dan berputus asa kerana ini baru permulaan saja. Banyak lagi cabaran yang akan ditempuhi sepanjang menjalani kehidupan. Semoga terus tabah dan teruskan usaha hingga berjaya ya.
Walaah, dengan terhidangnya Banana Cupcake ni maka berakhirlah sudah episod melangsaikan stok pisang lecek. Legaaa....

Banana Cupcake

Ingredients:
1/2 cup shortening - boleh juga diganti dengan yogurt atau sour cream
1 teaspoon vanilla
1 cup sugar
2 eggs
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1 cup mashed ripe bananas, about 3 large ripe bananas
1/4 cup buttermilk - kalau tak ada stok boleh guna kaedah di bawah untuk buat homemade buttermilk.

Preparation for the cake:
Cream shortening and vanilla; add sugar gradually, beating until light and fluffy.
Add eggs one at a time, beating well after each addition.
Sift together the dry ingredients; add alternately with banana and milk to the creamed mixture, beating well after each addition.
Fill greased and floured or paper lined muffin cups about 1/2 full. Bake at 375° for 18 to 20 minutes, or until done. Cool and frost as desired. Makes about 24 to 30 cupcakes.
Vanilla Sugar Glaze:
1 cup powdered sugar
1 tablespoon milk
1/2 teaspoon vanilla extract
1 cup powdered sugar

Few drops of favorite color - I added

Whisk together powdered sugar, milk, and vanilla until smooth, adding up to 2 tsp. additional milk for desired consistency. Drizzle over tops of scones.

Kalau tak nak letak sugar glaze tu rasanya elok tambah sukatan gula pada adunan sebab cupcake ni memang manisnya ala kadar aje gitu. Saya juga tambah kacang kat atas cupcake.

ReplyDeletemala ada 3-4 biji lagi pisang dah hitam. mcm nak jadi kek ke ... cupcake ke ... apam ke ... tak tau la lagi.
Nampak yummy sgt cupcake ni..anak mesti suka sebab ada pisang..elok juga untuk bantu penghadaman perut...kalau dok dekat2 boleh mieza kenen sebiji dua hehehe
