Yogurt Panna Cotta with Peach Jelly

Assalamualaikum & Salam Sejahtera,

Apa khabar teman semua? Apa menu makan hari ni? Dah ada pencuci mulut ke belum? Kalau belum bolehlah cuba panna cotta ni. Enteng sahaja nak menyediakannya. Tambahan pula dengan cuaca yang agak panas sekarang ni. Memang sesuai bebenorlah makan yang sejuk-sejuk untuk mencuci tekak tu.

Ini kali ketiga saya buat dalam masa 2 minggu ni. Nak ngabihkan stok gelatin Nur dan bahan-bahan lain yang sewaktu dengannya. Sebelum ni topping ngan buah Kiwi, lepas tu ngan buah peach tapi tak show kat sini..,tak sempat. Sebelum ni saya guna non dairy heavy cream tapi kali ni saya guna heavy cream substitute dan campur dengan yogurt. Nak tahu apa dia heavy cream substitute yang saya guna...teruskan membaca resepi di bawah ya...:)


Yogurt Panna Cotta with Peach Jelly

 Ingredients:
1 envelope unflavoured gelatin (2 1/4 teaspoons)
3 tablespoons water
1 cup heavy cream ~ I used substitute heavy cream (pls see note)
1/3 cup sugar - I put 2 TBSP
1 vanilla bean (split and seeds scraped)
1 (16 ounce) container Greek yogurt - I use low fat yogurt
Directions: 
Sprinkle the gelatin into the water in a bowl and let sit until softened, about 5 minutes.
Bring the cream, sugar and vanilla seeds to a simmer in a small sauce pan until the sugar has dissolved.
Remove from heat and mix in the gelatin.
Whisk the yogurt in a bowl until smooth.
Whisk the cream into the yogurt.
Pour the mixture into 6 1/2 cup ramekins (or the equivalent) and chill in the fridge for at least 3 hours.

Note:
 
Substitute heavy cream is made with Evaporated Milk, Whole Milk & Condensed Milk in a roughly 1:1:1 ratio .... much lower in fat than the Italian version (particularly because you can use 2% Evaporated Milk & some skim Condensed Milk... it will turn out a bit more dense than Panna Cotta but it will also be more flavorful. You can also sub 1/3 of the "Milks" with a liquor-simple syrup concoction... and you are back to a similar texture as Panna Cotta.

Strawberry (Peach) Jelly 

 Ingredients:
 
1/2 envelope unflavored gelatin
3 tablespoons water
1 cup strawberry puree – I used can peach and puree it
1 tablespoon lemon juice
1/4 cup sugar – I put 2 TBS
Directions:
Sprinkle the gelatin into the water in a bowl and let sit until softened, about 5 minutes.
Simmer the strawberry (peach)  puree, lemon juice and sugar until the sugar is dissolved.
Mix the gelatin into the strawberry (peach) mixture.
Remove from heat, let cool, pour it into what you want and chill in the fridge until set.

Pour on top of cream for servings once cream chilled.


Sebelum ni saya pernah share cara jimat kos untuk substitute heavy cream Di Sini. Tapi nak ingatkan lagi sekali substitute ni tak leh dibuat untuk whipping cream ya. Nak buat Panna Cotta ke, mushroom soup ke etc...bolehlah. Kali ni saya kongsikan satu lagi cara untuk menggantikan heavy cream bagi menyediakan Panna Cotta macam kat nota di atas.
 
 Tekstur Panna Cotta yang menggunakan  substitute heavy cream dari 3 jenis susu memanglah tak setanding dengan yang menggunakan heavy cream ori...tapi rasanya lebih sedap, ya lah campur 3 jenis susu kan. Mestilah sedap. Tapi jangan lupa untuk kurangkan sukatan gula ya sebab susu ni dah manis.  Okay selamat mencuba.
