Rendang Pedas Ayam Kampung - A guest post for dear Love of LOVE2COOKMALAYSIA

Assalamualaikum & Salam Sejahtera, 

This is my first guest post. As excited I was when I found out about Love's announcement for guest post event in her blog Love2CookMalaysia, I was even more excited when Love accepted my humble recipe and photos with open heart. And guess what?, Love was actually the first few friends who joined and follow my blog when I started to open it up for public views. Love who I knew just from the web, to me
 is friendly , kind hearted, jovial and down to earth kind of person. By looking at her knowledge on the variety of foods and recipes posted in her blog and by the comments given either to another blog or the comments replied in her blog, you can sense that Love is a true One Malaysia citizen:). I am not surprise if Love not only fluent talking in Malay but also know how to speak at least in one of Chinese dialects, a little if not fluently.

Back to the recipe which I have decided to share, this recipe is not new but is a well known recipe to all Malaysians - Rendang Ayam Kampung. This dish use to be prepared during Hari Raya festivities or at a feast but nowadays people also cooked it to be served as lunch or dinner. But to me this dish is one of my MIL (mother in law) signature dish not only loved by my late FIL (father in law) but by the family as a whole.

I remember we used to buy old chicken so that my MIL could make this rendang each time we went home, because my FIL loved it so much. In those days, my husband and I was staying in Kulim which is about 2 hours drive to our hometown and each time we went home at least once a month, my FIL would love if we buy "ayam kampung" so mom can make this rendang. Its very hard to get "ayam kampung" in Kulim then, so we will substitute it with old chicken instead, and normally we would buy 2 or 3 chickens enough to feed the whole big family. And all of us will eat on the floor by forming small groups, and because the family is so big, we occupied the entire living room right from the front of  the kitchen door up to the end of the living room.

This dish has it own sentimentle value to me as each time either I prepare or eat it
 , it will bring back those wonderful memory that I had with my late FIL.


Rendang Pedas Ayam Kampung
 ( Print resepi )

Ingredients:

1 ekor “ayam kampong” -  cut to 16 pcs, wash and dry
8 lemon grass – sliced thinly  and crushed
3 tumeris leaves – sliced thinly
1 pc of tamarind peel
2 cups of thick coconut milk
1 cup of water
½ cup of cili paste
5 - 6 pcs of hot chili* – depends on level of heat desired
15 pcs of shallots*
5 pcs of garlic*
1 ½ inch of ginger*
1 ½ inch of wild/blue ginger*
1 inch of fresh tumeric *
Salt to taste
2 tsp of sugar

Method:

Blend all * ingredients with few tbsp of water until fine paste. Set aside.

Place heavy pan on the stove, add in all the chicken, chili paste and the blended paste. Cook until  fragrant and until all the water from the chicken extracted out.

Add in a dash of salt.

Add in tamarind peel  and crushed lemon grass, stir to mix well, cook for 15mins.

Add in water and a cup of coconut milk, continue to simmer for 20-25mins, stir from time to time.
Season again with salt and sugar, add in another cup of coconut milk, continue to cook until the gravy reach to the desired thickness. When the gravy is about to reach the desired thickness, put in the slice turmeric leaves. Stir again for few minutes.

Serve hot or cold  with rice or ketupat pulut  (glutinous rice).

Assalamualaikum & Salam Sejahtera,

Pejam celik  pejam celik Raya dah dekat nak melabuhkan tirainya..tak lama lagi Raya Haji pulak menjelma. Tapi rasanya masih ada lagi yang mengambil kesempatan saki baki hari yang tinggal ni untuk mengadakan rumah terbuka. Kadang-kadang banyak sangat tapi raya dah nak habis sampai membawa ke lepas raya pun masih ada lagi yang mengadakan rumah terbuka.


Ikan Tenggiri ni merupakan ikan yang dulunya memang jarang...jarang saya beli. Sebab masa Kiki kecil dia tak makan ikan dan suami pulak tak biasa dengan ikan ni. Tapi kalau di NS, ikan ni memang merupakan ikan yang digemari dan selalu menjadi hidangan sewaktu kenduri dan selalunya dimasak masak lemak cili api atau asam pedas. Memang kow..nak-nak kalau masak lemak cili api tu di campur ngan sayur peria. Saya mula membeli ikan ni sejak Kiki suka makan ikan. Kiki suka ikan yang banyak isi seperti juga ikan bawal dan beberapa jenis ikan sungai.

Tapi Kiki tak berapa suka masak lemak cili api walaupun saya teringin sangat nak buat. Kiki lebih menggemari kari berbanding masak lemak cili api (maklumlah waktu kecil, di jaga oleh pengasuh berketurunan mamak semasa menetap di Kulim). Tapi sebab dah selalu sangat buat kari ikan, kali ini saya cuba sesuatu yang Kiki tak pernah rasa, Rendang Ikan Tenggiri. Sambutannya...kalau habis dia bedal tinggal serdak aje tu maknanya dia sukalah walaupun bila saya tanya dia suka jawab "suka hati mak lah". Macam tu lah jugak bila saya tanya..."Kiki, suka ke masak ikan macam ni?", dia jawab, " Suka hati mak lah." Eee geramnya saya ngan anak bujang sorang ni. Agaknya pada dia atau pada budak zaman sekarang ni kalau dia cakap " suka hati mak lah" maknanya dia sukakan sesuatu yang kita buat atau setuju dengan apa yang kita cakaplah kot...Ish, susah nak faham budak generasi Y ni lah ^..^.



Rendang Ikan Tenggiri ni saya masak untuk makan malam Jumaat lepas. Survey kat peti ais tengok yang ada stok ayam, tulang, daging dan ikan tenggiri. Minggu lepas belum ada masak ikan lagi. Daging banyak sangat kang kolesterol naik pulak. Tak lama lagi ada medical check up, tak pasal-pasal je kena sound ngan doktor nanti.

Resepi rendang ikan ni saya google dari Myresepi dari Ekin Nahar. Saya tak lah ikut sukatannya bulat-bulat tapi agak-agak je. Mana yang terlebih atau terkurang kita adjustlah bagi rasanya seimbang.


Rendang Ikan Tenggiri

Bahan:

700 gm ikan tenggiri
Minyak untuk menumis
250 gm kerisik
500 gm santan
2 helai daun kunyit (dihiris halus)
Sedikit daun limau purut
20 gm gula melaka- saya guna brown sugar
Sedikit garam

Bahan kisar:

20 gm cili kering
15 gm cili padi
80 gm bawang besar
20 gm bawang putih
20 gm halia
20 gm lengkuas
20 gm kunyit basah
20 gm serai

      Cara:

Panaskan minyak dan tumis bahan kisar sehingga naik bau.

Masukkan kerisik, masak dalam 5 minit, dan masukkan santan serta ikan tenggiri. Masak lebih kurang 10 minit dengan api perlahan.

Akhir sekali masukkan garam, gula melaka, kacau rata. Setelah itu masukkan daun kunyit serta daun limau purut.

Setelah masak sedia dihidangkan bersama nasi panas. 

Nota: Saya goreng ikan separuh masak terlebih dahulu sebelum masukkan ke dalam kuah.
Saya buat kurang pedas sebab nanti anak tak tahan pulak.

Hari ni masuk hari ke tiga saya berpuasa. Orang lain ramai yang dah habis puasa, saya baru nak mula. Nak buat macamana kan, ada aral melintang di tengah jalan di awal Syawal, bukan boleh di elak-elak ^..^ Emm, Rendang Daging ni saya masak semalam. Bila tengok resepi ni di upload oleh Mas tempoh hari, terus rasa nak cuba. Lagipun, boleh juga langsaikan saki-baki rempah kurma yang dah nak dekat tarikh lupus ni, hik hik. Nampak sedap sangat rendang tu kat dalam blog Mas. Nak mintak sikit tangan tak sampai, jadi kena lah buat sendiri.

Rendang Daging
Rujukan: Dapur Mas



Bahan:

1kg daging - dipotong kecil
2 peket kecil rempah kurma
1/4 cawan kerisik  
1 biji kelapa - ambil santannya
Garam secukup rasa
Gula melaka @ gula - saya guna brown sugar 
Sedikit air asam jawa
 
Bahan kisar:

2 labu bawang besar
5 ulas bawang putih
5 batang serai
1-1 1/2 cm halia
1-1 1/2 cm lengkuas
15-20 biji cili kering
  
Bahan di Mayang:

3 helai daun limau purut
1 helai daun kunyit

Cara:

Tumis bahan kisar hingga naik bau.
Masukkan rempah kurma.
Tumis lagi hingga berbau.
Masukkan daging , kacau rata. Biarkan 2-3 minit. Masukkan santan. Bila agak daging dah lembut, masukkan air asam jawa, garam dan gula.
Bila daging dah betul-betulembut, masukkan kerisik dan gaul rata.
Akhit sekali masukkan daun yang di mayang, biar hingga kuah pekat dan kacau selalu.


Perhatian : Masak hendaklah dengan api perlahan.
